Ingredients
- 2 salmon fillets
- 2 cups fresh spinach
- 1/2 cup sundried tomatoes, chopped
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Directions
- In a large skillet, heat olive oil over medium heat. Season the salmon fillets with salt and pepper, then place them in the skillet skin-side down. Cook for about 4-5 minutes on each side or until cooked through and flaky.
- Remove salmon from the skillet and set aside. In the same skillet, add garlic and sauté for about 1 minute until fragrant.
- Stir in sundried tomatoes and spinach, cooking until the spinach is wilted.
- Pour in the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese until the sauce thickens, about 2-3 minutes.
- Return the salmon to the skillet, spooning the sauce over the fillets. Heat for another minute, allowing the salmon to absorb some sauce.
- Serve warm, garnished with fresh basil if desired.
