Ingredients
- 4 cups broccoli florets
- 1 cup onion, chopped

1 cup shredded carrots
- 2 cloves garlic, minced
- 4 tablespoons butter
- 4 cups vegetable broth
- 1 cup milk
- 2 cups shredded cheddar cheese
- Salt and pepper to taste
Directions
In a large pot, melt the butter over medium heat. Add the chopped onion, shredded carrots and minced garlic, sauté until the onion is translucent.
- Stir in the broccoli florets and vegetable broth. Bring to a boil, then reduce heat and let simmer until the broccoli is tender, about 10 minutes.
