- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 2 cups grated carrots
- 1/2 cup crushed pineapple, drained
- 1/2 cup walnuts, chopped (optional)
- 8 oz cream cheese, softened
- 1/4 cup maple syrup
- 1/4 cup powdered sugar
- 1 tsp vanilla extract

Directions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, blend granulated sugar, brown sugar, and vegetable oil. Add eggs one at a time, mixing well.
- Stir in grated carrots and crushed pineapple, then gradually add the dry ingredients.
- Fold in walnuts if using. Fill muffin cups 2/3 full and bake for 20-25 minutes until a toothpick comes out clean.
