  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 cups grated carrots
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup walnuts, chopped (optional)
  • 8 oz cream cheese, softened
  • 1/4 cup maple syrup
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • Walnut Pieces For Garnish or Add To The Mix

Directions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, blend granulated sugar, brown sugar, and vegetable oil. Add eggs one at a time, mixing well.
  4. Stir in grated carrots and crushed pineapple, then gradually add the dry ingredients.
  5. Fold in walnuts if using. Fill muffin cups 2/3 full and bake for 20-25 minutes until a toothpick comes out clean.
  6. While muffins cool, beat cream cheese, maple syrup, powdered sugar, and vanilla until smooth. Frost cooled muffins generously.
